Mycotoxins are toxic compounds produced by certain fungi, also known as molds that can contaminate food and feed, posing a risk to human and animal health. These toxins can be found in various food products like grains, nuts, dried fruits, and even milk, and can cause a range of health problems. The main source of exposure to mycotoxins is through ingestion, mainly by eating contaminated food. Mycotoxins are absorbed by plants during growth or after harvest and can remain in food even after washing, cooking and processing as some of them are heat resistant. Being odourless and tasteless, it becomes difficult to detect the contamination of food without testing in a well-equipped laboratory. FSSAI has listed the following mycotoxins to be tested/analysed in various food matrices.
