In present times, dairy is the top-ranking commodity in India. We all are aware that dairy foods play an important role in providing nutrients for growing children and teens. Milk and dairy products have been serving as great sources of protein especially casein, calcium, vitamins, minerals, carbohydrates for people of almost all age groups including adults, seniors and athletes.
Milk is one of the highly perishable food commodities as it acts as a super medium for the growth of microorganisms, eventually functioning as a potential vehicle for transmission of diseases. Some microbes can be pathogenic and cause serious health problems to consumers.
Consumption of raw milk or unpasteurized milk is reported to cause food borne infection particularly by a few bacteria like Campylobacter, Shiga toxin–producing Escherichia coli, and Salmonella enterica serotype Typhimurium. Therefore, food safety may be a serious concern for the dairy industry. This increases the demand for processed milk and dairy products all over the globe.
