Milk is one of the highly perishable food commodities as it acts as a super medium for the growth of microorganisms, eventually functioning as a potential vehicle for transmission of diseases. Some microbes can be pathogenic and cause serious health problems to consumers. 

Consumption of raw milk or unpasteurized milk is reported to cause food borne infection particularly by a few bacteria like Campylobacter, Shiga toxin–producing Escherichia coli, and Salmonella enterica serotype Typhimurium. Therefore, food safety may be a serious concern for the dairy industry. This increases the demand for processed milk and dairy products all over the globe.

TYPES OF DAIRY PRODUCTS

Milk – Toned milk, double toned milk, full cream milk, skimmed milk, standardized milk, flavored milk, UHT processed milk, condensed milk, and evaporated milk
Milk powder – Skimmed milk powder, whole milk powder, infant milk formula and follow up formula.
Butter, butter blends, ghee (milk fat) and cream
Cheese- natural cheese, processed cheese, flavored cheese products
